Tomato Herbed Chicken

  1. In a skillet, heat oil over medium heat. Sprinkle chicken with flour and add to skillet. Cook, turning, until brown on all sides. Transfer chicken to a plate and set aside.
  2. Add onion, celery and green pepper to skillet; saute for 5 minutes or until softened. Add oregano, tomatoes and mushrooms. Bring to a boil. Reduce heat and simmer, uncovered for 10 minutes or until liquid is reduced and thickened. Add reserved chicken; cover and simmer for 20 minutes or until chicken is cooked and no longer pink.
  3. Serve chicken and sauce over cooked pasta.
